Healthy Snacks

Today Kat is having folks share healthy snacks for Parenting University. While my little Peanut is not yet at that stage... Mr. S and I like to eat healthy and do not keep processed foods, snacks, chips, cookies, etc in our pantry 95% of the time.

Quick snacks we enjoy are Tamari Almonds, Pistachios, Cashews, Apple with a slice of Cheddar, or fruit in general.

However, here is a healthy snack/dessert that is low fat, low sugar and we absolutely love. You can pour it warm over fruit or mix it up at a cool temp with fruit and granola to make a healthy parfait.

Ingredients
2 cups 1% low-fat milk
1 large egg
1/3 cup sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract

Your choice of fruit! We love berries or peaches.



Preparation
1. Whisk together first 4 ingredients in a small nonaluminum saucepan over medium-low heat, and cook, stirring constantly, 15 minutes or until slightly thickened. (Mixture should lightly coat the back of a spoon.) Remove from heat; stir in vanilla.


You can pour fresh custard warm over berries and then...

2. Pour mixture into a small mixing bowl, and place plastic wrap directly over surface of custard to prevent film from forming; chill 2 hours or until ready to serve.

3. Layer fruit and granola in serving glasses/cups. Drizzle each with 1/4 cup vanilla sauce.
